Hearty Lentil Soup
Published on June 27th, 2009.
I have this recipe for lentil soup that’s so good for the cold season. It’s a good source of protien since lentil is part of the legume family. The ingredients are: 3 strips bacon, 1 large onion, 2 diced carrots, 3 cloves garlic, 1.5 cups lentils, 2 cans chicken broth, 1 tbsp red wine vinegar, salt and fresh pepper. You just have to cook the bacon until crisp, then use the oil from the bacon to saute the onion, garlic and carrots. Add the lentils and chicken broth and bring to a boil until the lentils are tender. Lastly, stir-in the vinegar, salt and pepper. Serve while it’s hot and enjoy!
