Kilawin Recipe

Slice ½ kilo of pork (pork belly or spare ribs) into 1 inch thick, sprinkle with salt and roast over fire until medium-rare cooked. Chopped the meat into cubes and place it into a bowl. Pour ½ cup sugar, lemon and a little soy sauce. Set aside for 15 minutes. Squeeze the meat and transfer to a platter. Mix 1 sliced onions, 1 clove sliced garlic and 2 siling labuyo. You may season it with soy sauce or marinade according to your taste. Serve with your favorite liquor.
