Lengua de Gato

When we went to Baguio last year, I found out that Lengua De Gato was one of the favorite delicacies in the place. I even bought some jars to be tasted. So I came across the recipe of this delicacy and tried to make one at home. We need ½ cup butter, ½ cup white sugar, 1 cup flour, 3 egg whites, and ¼ teaspoon of vanilla extract. Then cream the butter with sugar until it is smooth. Then we blend the egg whites by putting a little amount and beat each time we make an addition. Then fold in the flour, vanilla extract and a pinch of salt. Pipe into a cookie sheet 2 inches long and leave 3 inches space between each cookie for spreading. Bake in a pre-heated oven for 10 minutes or until edges are brown, and top cookies with butter and sugar.
